Tuesdays at the Table

I thought and thought...and then thought some more. Racking my brain. Trying to come up with SOMETHING to post about that was food related, so I could play along with Andrea at My Chihuahua Bites and her Tuesdays at the Table. Today as I was visiting Andrea and dropping off a few comments. I thought of something. She always says that it doesn't have to be a recipe that we share, but that it can be a new food product, or something we've tried, or just anything food related. As I was leaving Andrea a comment, and letting her know she wasn't alone in her "loss of words...or recipe" for Tuesdays at the Table, I thought of something food related that I would like to share!


Many of you have probably already seen theses, read them, and love them.

My favorite one (ok, one of my favorites because I have several) is the 5 Ingredients or Less! Who doesn't love a meal that only calls for 5 ingredients? The fabulous thing about this cookbook is that it is split up into seasons. So, there are some specific recipes that are Spring related or Summer related, and go right along with the season we are in. There are always neat little tidbits at the bottom of each page. Sometimes it's a tip for preparing the meal, or an idea on how to make your home more "springy" or "summery" or whatever season it is. The Christmas one is great too, it has so many ideas for the holidays...how-tos on recipes, drinks, gifts, and ornaments.

Each week on their website (http://www1.gooseberrypatch.com/) they post a recipe of the week and a tip of the week. This weeks recipe is Onion French Bread from their Almost Homemade Cookbook (my kind of cookbook).


Onion French Bread

1 loaf French bread, sliced in half lengthwise1 c. mayonnaise1/2 c. onion, chopped
1/2 c. grated Parmesan cheese

Garnish: paprika
Place bread on an ungreased baking sheet and set aside. Mix mayonnaise, onion and cheese; spread over cut side of bread. Sprinkle with paprika; broil for 3 to 5 minutes, or until golden. Slice and serve warm. Serves 6 to 8.

Most of the cookbooks sell for less that $20. They have a tons of cutsie things on their website, not just cookbooks!

Tuesdays at the Table

Today I'm going to join in Tuesdays at the Table over at My Chihuahua Bites! Every week Andrea puts up great recipes and then has a Mr. Linky on her post where everyone can add a link to their own food related post. It's great fun!


The recipe I'm going to post today is kinda made up. My husband and I LOVE shrimp, so about once every couple of weeks I make Shrimp Pasta. It's YUM!


Here's the ingredients:


1 box Angel Hair Pasta or Linguine
1 pound medium size Shrimp (w/o tail)
1 bag fresh or frozen snap peas (you could substitute any veggie)
1 stick of butter (I've used I Can't Believe It's Not Butter and it worked pretty good)
3 tbsp. Cream Cheese
3 tbsp. Shredded Parmesan Cheese
1 tsp. minced garlic
Old Bay Seasoning
extra Parmesan Cheese


Directions:

Boil your pasta. While pasta is boiling, steam shrimp in microwave. I like to use the new steamer bags. It's really quick and easy to clean up. While pasta is boiling and shrimp is steaming, put your butter, cream cheese, Parmesan, garlic and seasoning in a skillet. Let all of these ingredients melt together. When the shrimp is finished steaming, put your veggies in the microwave to steam for a few minutes. This really speeds things up. When pasta, shrimp, and veggies are finished cooking. Drain the water and toss the shrimp and snap peas into your skillet coating them with your sauce. Serve over pasta immediately. Top with extra Parmesan. YUM!
